Santiago Bryan-Zwick is the owner of Avalon Smokehouse, Catalina Island’s premier barbecue caterer, known for bringing authentic pit-smoked BBQ and bold flavor to the island. What started as porch smoke and family recipes grew into a mission to build something bigger through food, craft, and community.
