Santiago Bryan-Zwick is the owner of Avalon Smokehouse, Catalina Island’s premier barbecue caterer, known for bringing authentic pit-smoked BBQ and bold flavor to the island. What started as porch smoke and family recipes grew into a mission to build something bigger through food, craft, and community. He led Team Spaceman Knives at the 2025 Open Fire Meat Up, raising the bar with salmon pinwheels, longanisa sausage, and a charcuterie spread for the masses.
